Pumpkin Spice Overnight Oats

I can’t say enough how much I love making overnight oats. There are three big reasons that these win my heart for breakfast…

  1. 1. Overnight oats are quick and easy to make
  2. 2. They’re cheap to make which is huge when you are on a tight budget like my family
  3. 3. They’re DELICIOUS and I want everyone to know about them. I know, you’re welcome.

If you know me then you know that I have quite the obsession with anything pumpkin flavored. Coffee, lattes, muffins, pie.. you name it and I probably love it. My heart breaks when the fall season is over and stores discontinue their pumpkin goodies until the following fall. Who’s with me on this one?

Now, I know it’s March and we just celebrated St. Patrick’s Day and even Easter but I really needed some pumpkin in my life right now. What better way than to come up with a yummy pumpkin recipe for my beloved overnight oats? If you haven’t tried any of the overnight oats yet, this one can be your first and let me tell you- you won’t regret it!

Pumpkin Spice Overnight Oats:

If you love pumpkin as much as I do, you are going to love this recipe… even if it is the end of March. It’s always a good time for pumpkin flavored goodies right?!

What you will need

1/2 cup milk (any kind that you prefer)

1/2 cup plain yogurt

1/2 cup rolled oats

1 Tbsp chia seeds

1 tsp. pure vanilla extract

2 Tbsp maple syrup

1/4  tsp pumpkin pie spice

1/8 tsp nutmeg

Directions

  1. 1. Mix all of the ingredients in any container that you can put a lid on (bowl, jar, etc.) and stir until all ingredients are mixed well
  2. 2. Leave in the refrigerator overnight or for at least 4 hours
  3. 3. Open, smell the delicious pumpkin aroma and enjoy!

p.s. This recipe was very tricky to get the proportions of spices right. I tried many times but simply had way too much of the spices (specifically nutmeg). I personally used half of the pumpkin pie spice mixed with the other ingredients and then used the other half to sprinkle on the top after it was refrigerated.
